Ingredients
1 red onion, 1/2 cup cider vinegar, 1 bay leaf, 1 teaspoon sugar, 1/2 teaspoon salt and a few slices pickled jalapeños
Preparation
Slice onion thinly and place in mason jar. Bring all other ingredients to a simmer and then pour over red onion and seal. Shake occasionally. Ready to eat in 4 hours. Keep in refrigerator.

There are many small variations that can be made to enhance it’s pairing especially use of different herbs and spices. Make it your own and share it with someone new.
