Jack’s Banana Bread | Linda Wilimer

Ingredients

  • 8 oz self raising flour
  • 1/2 teasp. salt
  • 4 oz butter
  • 6 oz caster sugar
  • 2 eggs
  • 1 lb ripe bananas
  • 4 oz sultanas (golden raisins) – optional:

Preparation

Beat butter and sugar , add mashed bananas and beaten eggs. Sieve flour and salt, then add gradually to mixture. Add sultanas. Turn mixture into lined and greased loaf tin. Bake in the centre of moderate oven (350 F, Gas mark 4) for about an hour or until firm to the touch. Perfect for afternoon tea.

What makes it special?

My Dad (in the UK) worked long hours at a job in his later life that involved numbers and figures and was very pressured. His hobby to relax became baking. This is just one of his recipes. Once he retired he baked more often, making my three tier wedding cake, with an extra layer “just in case”. He made Christening and Baptism cakes, more wedding cakes for family and friends and fabulous Christmas cakes and I decorated them!! Some of my friends still use his Christmas cake 30 years later!
