Ingredients
- 1 box elbow macaroni
- 2 eggs
- 2 tbsp. butter
- 1 small onion, chopped
- 1/2 green bell pepper, chopped
- red pepper, to taste
- 1 block regular/sharp Cheddar cheese, grated
- 1/2 cup evaporated milk
- table salt or seasoning salt, to taste
To Prepare
Boil elbow macaroni as directed on the box. Drain and return to the pot it was boiled in. Add grated cheese and remaining ingredients. Stir until the cheese is melted, and all ingredients are well-blended and the texture is creamy.
Pour into a baking pan. Top with a thin layer of grated cheese and bake at 350°F for about 45 minutes or until the top is golden brown.

This is a recipe I love to use to make one of my favorite Bahamian dishes…my grandmother was born in Nassau, Bahamas.
