Egg and Tomato Noodles


3 eggs and an equal volume of tomatoes, 2 servings of noodles, chopped scallions, salt, pepper, sugar, oil


Cook the noodles according to the package directions. Mix in a little oil to keep them from sticking while you make the eggs and tomatoes. Beat the eggs and slice the tomatoes. Add 2 tbsp of oil to the wok. When it smokes, pour in the eggs. Cook until they just hold together (they should still be wet). Put the eggs on a plate. Put the tomatoes in the wok and add salt, pepper, and a big pinch of sugar. Cook until they start to brown and release juice. Add the eggs back in and mix with the tomatoes, cooking until the eggs are as done as you like them. Add the scallions to the wok for a minute or less. Pour eggs and tomatoes over noodles and mix together.
