Ingredients
- Cookie Ingredients:
- 1 cup (2 sticks) unsalted butter, softened
- 2 cups granulated sugar
- 3 large eggs
- 4 cups all purpose flour
- 4 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 3 tsp pure vanilla extract
- 2 cups ricotta cheese (whole or part skim)
Frosting Ingredients:
- 1/3 cup butter, softened
- 3 cups sifted powdered sugar
- 4 tbsp milk
- 1 tsp pure vanilla extract
Preparation
Method for Cookies:
In large bowl, beat together butter and sugar. Add eggs, beating after each addition. Beat in vanilla.
In a separate bowl, combine flour, baking powder, baking soda and salt. Gradually add to butter mixture on low speed.
Lastly, blend in ricotta cheese.
Drop by tablespoon on greased cookie sheet. Bake in 350 degree oven for 12 to 15 minutes, or until slightly golden on edges.
Cool on wire rack and then top with frosting. Decorate according to season.
Method for Frosting:
Beat butter until light and fluffy. Gradually add powdered sugar. Beat in milk and vanilla. Add food coloring if desired.
Double frosting recipe for full batch of cookies, otherwise remaining cookies freeze well for up to three months in an air tight container or freezer bag.
What makes it special?
A favorite of both young and old cookie lovers, these simple ricotta cheese cookies are easy to make and yield a lot to share. They are very versatile and fun to decorate according to season or occasion. My mother always makes them to bring when visiting our family, and so, they have been lovingly nicknamed “Grammy Cookies” by my children. We like to make them during the holiday season to share with friends and neighbors.
